HOW TO MAKE MIE CALUK
ORIGINAL FROM ACEH
Maybe for those of you who live in urban areas, the
name Spaghetti is not a stranger anymore. But for us Acehnese, when eating
Spaghetti must imagine Mie Caluk ala kampung that always make missed kampong
yard. For me personally Mie Caluk delicacy can not be replaced with Spaghetti.
For those of you who are curious about the taste of
Caluek Noodles with Spaghetti, please refer to the following Recipes I got from
the post of Koran Serambi (Koran Seruran (newspaper published in Aceh). Perhaps
the model and taste of this noodle is slightly different when you come directly
to the famous area of Mie Caluk that is Pidie Regency, there are various
flavors of noodle caluk, there are using peanut seasoning, spice lado and urap.
Here's the make step :
Materials needed :
- 500 grams of wet yellow noodles / sticky noodles
- 150 grams of beef, diced
- 1 / 4kg of shrimp
- 750 ml broth
- 850 cc of water
- 4 cloves of garlic, thinly sliced
- 4 onions, thinly sliced
- 1 tomato, cut into pieces
- 1 spring onion / celery, thinly sliced
- 50 grams of bean sprouts, clean
- 50 grams of cabbage / cabbage, thinly sliced
- 1 tablespoon of sweet soy sauce
- 3 bay leaves
- 1 teaspoon of vinegar
- 1 teaspoon salt
- 1 teaspoon ground pepper powder
- 1 teaspoon of sugar
- 1 teaspoon cumin
- 1 spring onion, 1 cm
- Right amount of oil
- Frying chips sufficiently
- Margarine
Softened seasoning :
- 6 onions
- 5 cloves of garlic
- 2 large red peppers, seeded
- 1 cardamom grain
- 2 cm turmeric, burned
- 1/4 tsp of cumin
- 1/2 tsp pepper powder
- Salt to taste
Supplementary material :
- Fried onions
- Red Crackers
How to Make Mie Caluk:
1. Onions, garlic, and spices
finely sauteed with margarine until fragrant.
2. Enter the beef, stir
and cook until the meat changes color.
3. Add the shrimp, crab,
and broth, then mix well.
4. Put onion, salt, bay
leaf, and pepper powder.
5. Cook until the meat, crab,
and shrimp are cooked.
6. If the water has been
reduced and the meat is soft, reduce the heat.
7. Enter the cabbage,
tomato, and bean sprouts.
8. Add noodles and sweet soy
sauce.
9. Stir until all
ingredients are well blended and cooked lift and serve.
How to Serve Mie
Caluk:
1.
Prepare the bowl, then enter the noodles.
2.
Pour the gravy.
3.
Sprinkle the
fried onions on it.
4.
Serve with complementary.
5.
Sprinkle the
red crackers.
